Chocolate and Beetroot(!) Cake |
Today's recipe is Chocolate Beetroot Cake! It is gluten free and ok for those of us who live a Paleo lifestyle :)
This has proved to me that if you are creative and prepared to make an effort with preparation, there is no reason why you can't eat clean. It was very easy to make and the results were pretty damn good if I may say so myself!
Ingredients
3 cups of grated, cooked beetroots
4 eggs
1/2 cup almond oil/coconut oil
1/2 cup organic honey
1 tablespoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup cocoa powder
1/3 cup coconut flour (for a slightly fluffier and dryer cake, use 1/2 cup coconut flour)
Dark Chocolate chunks
How to make
- Preheat oven to 170C (350F).
- In a food processor or blender, blend the beetroots, eggs and oil.
- Add the honey, vanilla extract, baking soda, sea salt and spices.
- Add the cocoa powder and coconut flour and mix. Then add in the chocolate chunks
- Pour into a greased baking tray of choice. I used a loaf tin.
- Bake for 45 minutes, or until an inserted toothpick comes out clean.
- Cool completely before cutting and serving. Garnish as desired.
