Chicken Fried Cauliflower Rice |
However, for those of us who try and avoid such dishes, here is a nice recipe that means you can have something that is along the same lines as a chinese dish but not nearly as sinful..
You may have read in one of my other recipe posts that I have got into cauliflower as a rice/couscous substitute. This recipe has been tried and tested by me and my pal Steph and we give it a thumbs up!
Ingredients
- Chicken (or prawns or beef or any meat)
- Coconut Oil
- Onion
- Sweetcorn
- Peas
- Egg - scrambled
- Cauliflower
- Soy Sauce
- Grate the cauliflower when raw and throw into boiling water for one minute. Drain and keep separate.
- Warm the coconut oil and scramble some eggs (I used one egg per person), then keep to one side.
- Brown off the chicken and fry the onion, add in the peas and sweetcorn (you could use any vegetables you fancy in this recipe, I used peas and sweetcorn as it was the most similar to the chicken fried rice I used to get from the Chinese!)
- In a large pan or a wok, mix all the ingredients together and fry for 1-2 minutes, adding a little soy sauce for flavour.
- Serve immediately.
- ENJOY!
